This airy cake begs to be topped with rick, custardy ice cream. Try to find a 10-inch tube pan with a removable bottom; it allows you to remove the cake.

Ingredients

  • 1 cup sifted soft southern flour (see Sources) or cake flour
  • cups sugar

Method

Preheat the oven to 375°F. Sift the flour with ½ cup sugar at least three times and set aside.

In the large bowl of an electric mixer, beat the egg whites, salt, cream of tartar, and v
