Pickled peaches are a staple of the holiday table in the lowcountry. Some of the funniest moments of my childhood were when the spicy globes would slide from under someone’s fork and go bouncing across the table, rolling precariously toward a wineglass. They are served with salty country ham and with turkey, in lieu of the New Englander’s cranberry sauce.
