“I’ve been smoking salmon for the restaurants for nearly two decades and my first experiment with my Bradley smoker worked a treat so I’ve stuck to the same curing and smoking method ever since.

It’s pretty straight forward to be honest and like all good food you need to start with good quality ingredients and in this case the salmon. There’s lots of bad salmon out there which can be very fatty and not so good for smoking.
