Can’t find guanciale? Amatrice in Italy was famous for its pigs. The prize part of the famous pasta sauce was the pig cheek or guanciale. However, if you can’t get hold of any don’t give up on this magnificent sauce. You can use pancetta or a very good dry cure bacon. What you will need is fat. Amatriciana is not as good without fatty bacon or pancetta.

So, try and source a good pancetta and don’t worry about the fat content. The marriage of chilli, pancetta and fat with the tomatoe
