Porchetta is an Italian method of cooking pork belly which has become steadily more popular in the UK. It is better known in Italy as a filling for crusty bread and is often sold as a street food. However, it also makes a stunning roast pork. The combination of garlic, fennel seed, rosemary and thyme given the meat a lovely herbed flavour whilst the skin of the pork.

A good basic recipe for porchetta which yielded succulent meat and crispy skin. As I made it with 3 kg pork naturally the cooking time increased.
