Ingredients: 1 kg floury potatoes-Yukon Gold or Marls Piper; 150 ml port; 100 ml olive oil; 75 ml brandy; White pepper; Butter; 1 bottle red wine; Vegetable oil; 100 g cold butter cut into cubes; Thyme sprigs; 500 ml reduced brown chicken stock; 250 ml double cream; 1 kg white onions; 6 proper sausages; Salt; 10 g salt
