  • 180 g ( oz) dried chickpeas
  • pinch of bicarbonate of soda (baking soda)

Method

  1. Put the chickpeas in a large bowl or saucepan and cover with at least three times the quantity of water. Stir in the bicarbonate of soda and leave to soak overnight. Drain off the water and rinse the chickpeas well.
  2. Put the chickpeas in a saucepan and cover with fresh water, then place the pan over medium heat and bring to the boil. Simmer for 1 hour, or until
