  • 250 g (9 oz) unsalted butter

Method

  1. Put the butter in a microwave-safe bowl. Cook in the microwave on High (100%) for 1 minute, then leave to cool in the microwave for 2 minutes. After this time the butter will have separated – use a spoon to skim off the foamy proteins from the surface and discard. Gently spoon the clarified butter into a clean container, leaving behind any water or milk solids in the bot
