  • 1 kg (2 lb 3 oz) ripe tomatoes

  1. Cut the tomatoes in half and put them in a microwave-safe dish (I like to use a glass Pyrex dish, which comes with a vented lid). Add half the olive oil, a good pinch of salt, some pepper and the thyme leaves. Place a lid on top and open the steamer hole. If your dish doesn’t have a lid, use plastic wrap and poke a hole through the plastic to allow the steam to escape. C
