  • ½ garlic clove, peeled
  • salt flakes
  • 1 tablespoon Harissa


  1. Crush the garlic with a pinch of the salt in a mortar and pestle until very smooth, then add the harissa. Use a fork or small whisk to mix in the vinegar and then the olive oil, and season to taste with salt and pepper.
