One of my favourite foods as a child was a soft-boiled egg with toasted ‘soldiers’. For me there is still something magical about pushing that first buttery, toasted soldier into the soft egg yolk and watching it burst up as you try to dip the toast into the yolk, without losing half of it down the side of the egg. Nowadays I love making this with anchovies, as I find their saltiness works so well with the eggs. I wonder if I would have eaten them this way when I was a kid?
