I’ve given the traditional eggs benedict a bit of a twist here with the addition of beautiful portobello mushrooms. Portobellos have a wonderful earthy and meaty texture, so you could easily leave out the ham if you wanted, but I have left it in. This is a breakfast classic for good reason: it’s comforting and warming, and filling enough for you to probably skip lunch.
