A great breakfast is always one that is easy to prepare – especially during the week, when you’re trying to get out the door – and this gets no easier, because most of the hard work can be done the night before. I’ve made suggestions here so that this recipe can be adapted so it’s suitable for vegans too.

Ingredients

  • 225 g (8 oz/ cups) rolled (porridge) oats

Method

  1. Combine the oats and milk in a bowl and leave to soak for 20 minutes. Mix the grated apple and pear in another bowl and stir in the lemon zest and juice.
  2. Now combine the soaked oats and grated fruit in a large bowl. Add all the remaining ingredients except a few blueberries, raspberries and the toasted flaked almonds, all of which will be used to garnish. Leave
