Power up with this bowl of goodness – it will keep you happy until lunchtime. I prefer this served warm with fresh fruit, but it’s just as good cold – make it the day before and loosen it in the morning with extra coconut milk.

Ingredients

  • 1 tablespoon grated fresh turmeric
  • 1 tablespoon grated fresh ginger

Method

  1. Mix the fresh turmeric and ginger in a bowl, add the water and set aside for 15 minutes to infuse, or refrigerate overnight.
  2. Pour the turmeric and ginger infusion into a saucepan. Add the coconut milk, oats, honey and vanilla seeds. Place the pan over medium heat and bring to a simmer; cook for 8 minutes, or until the mixture thickens. Remove from the heat and
