Put the butter, three sugars, salt and bicarbonate of soda in the bowl of a freestanding electric mixer and attach the paddle. Cream on low speed for 1 minute, then use a spatula to scrape down the inside of the bowl to ensure everything has evenly mixed. Increase the speed to medium and beat until pale and smooth.
