On some mornings I crave something sweet, while on others I’d rather something savoury – it all depends on my mood or how busy my day is. Inspired by the classic red velvet cake, these muffins are perfect for ‘on the go’ breakfast treats. These are definitely for the sweet days.

Ingredients

  • 250 g (9 oz/1⅔ cups) plain (all-purpose) flour

Method

  1. Preheat the oven to 170°C (340°F). Grease a 12-hole standard muffin tin.
  2. Sieve the flour, cocoa powder and baking powder into the bowl of a freestanding electric mixer. Stir in the sugar and salt, then attach the paddle.
  3. Lightly beat the eggs
