This classic French pan-fried chicken with a mushroom sauce is easy to prepare and will fully satisfy any guest. The recipe may be traditional but it’s also versatile—try adding onions, wild mushrooms, tomatoes, button onions or smoked bacon to the sauce. Delicious with crusty bread or roast potatoes.

  1. Preheat the oven to moderately hot 200°C (400°F/Gas 6). Cut the chicken into four or eight pieces, following the method in the Chef’s techniques, then roughly cut up the remaining carcass with a knife or kitchen scissors.<
