The Basque country is located in the south-west of France and northern Spain, close to the Pyrenees mountains. This traditional recipe uses local produce such as onions, capsicums, tomatoes and garlic but we have substituted the more readily available Parma ham or prosciutto for the local cured ham from Bayonne, and olive oil instead of the traditional goose fat.
