Cleaning bivalves can be a hassle, but it’s absolutely worth the effort for these spicy, steamed mussels. Tomato paste gets caramelized with butter to bring a slight sweetness. Then, the combination of fire-roasted crushed tomatoes, white wine, and slightly briny juice from the mussels creates a glorious broth that demands to be soaked up with slices of grilled baguette.
