Elevate your scrambled eggs by giving them an Indian twist that will have you hooked from the first spoonful. The trick is not to overcook the eggs; fold them gently with a spatula and keep the heat low once the eggs are in the pan. They work well with regular toast but are great with any fresh or leftover naan.

  • 2 tbsp vegetable or rapeseed oil
  • ½ small red onion, finely diced

  1. Heat the oil in a frying pan and when hot, add the onion and green chilli. Keep the pan on a medium heat at this stage.
  2. After 3-4 minutes, add the tomatoes and cook for a further 2 minutes so they begin to soften. Stir in the ground turmeric and Kashmiri chilli powder until well mixed.
