Just as the afternoon light begins to fade, the daler bora wallah begins to prepare his offering to passers-by. He is based at the top of Park Street, near the metro, in the hot bustling metropolis of Kolkata. Each afternoon, returning to our hotel, we would pick up some of his lentil fritters. In many he stuffs some green chilli, but you can omit this part and instead have a couple blended into the dal mixture. They are best eaten piping hot with a sprinkling of chaat masala.
