This dal is found in roadside cafes, or dhaba, in India, especially along highways and at truck stops and petrol stations. Don’t underestimate the quality of food served, though. I have had some truly memorable meals in India at these very basic pitstops where homestyle local cooking can be witnessed and tasted. You will notice that two different types of lentil are required in this dal.
