This dal is the culinary equivalent of a warming hug and is perfect when your body seeks nourishment in minimal time. I have added cherry tomatoes, but you can add any vegetable, just focus on one rather than a mix. If using a root vegetable, add them when you cover the dal with water at the beginning. If you prefer a softer vegetable such as courgette, marrow, peas or spinach, add these in the last 5 minutes.
