Palak dal is a delicious, healthy spinach dal that can be made with a variety of different lentils. While I tend to make mine with yellow moong, also known as yellow mung, you can also make it with toor or red split lentils, known as masoor dal. It is a highly nutritious vegan meal thanks to the combination of lentils and spinach, which also give the dal great contrasting colours of bright green and turmeric yellow.
