I always have a glut of courgettes in my fridge, so this is a great way of using them up. It’s quick to prepare and uses a combination of whole and dried spices. The quantity of water in this recipe depends on the ripeness of your tomatoes to make the gravy. The courgettes themselves take minutes to soften and then it’s finished with a sprinkling of garam masala and some fresh coriander. I love to eat a bowl of this on its own, but it also works well as part of a larger Indian feast.
