This rich, unctuous, tomato-based North Indian vegetarian curry is hugely popular, both in India and in my house. It is often called paneer matar, as matar means pea. Paneer is a mild, unsalted soft cheese that easily absorbs surrounding flavours. While paneer is straightforward to make, I often rely on store-bought packs and today you can find it at most large supermarkets as well as Asian grocers. This is a great vegetarian curry that is packed full of flavour and goodness.
