I’m a huge fan of cabbage and I do think it is massively underrated as a vegetable. In the West it’s used in slaws, adding crunch and texture, but boiled or steamed it can be a bit bland and unmemorable. In India, spices are added which completely transforms it. I have a couple of cabbage recipes in this book: my South Indian cabbage thoran and this Bengali recipe which was passed down to me by my relatives.
