This mild vegetable dish can be found in the southern states of India. It is a great dish to cook if you have a variety of vegetables that need using up in the fridge. Typically in India, drumstick (also known as moringa) is added, along with a combination of four or five of the following: potatoes, gourds, pumpkins, radish, turnip, fine green beans, yams, aubergines, carrots, and peas. There are so many combinations, so do play around and see which ones work best for you.
