This is so simple that it almost seems too easy to include in this book. Sometimes however, the simplest recipes are the best and this one is a firm favourite in my household. The ingredients marry well together, and the actual cooking time is a matter of minutes. If you can’t find bream for this recipe, sea bass works equally well.


  • 4 bream fillets, skin on
  • 1 tsp ground turmeric
  • 1 tsp freshly ground


  1. First, place the bream in a bowl and evenly cover with the ground turmeric, black pepper and salt. Cover the bowl with cling film and place in the fridge for 10 minutes before cooking. Bring back to room temperature when you begin the cooking itself.
  2. Heat the oil in a frying pan on a medium heat, then add the nigella seeds. They will immediately begin to sizzle
