Mention the words kosha mangsho — lamb curry — to a Bengali and you’ll see their spirits lifted and smiles across their faces. It’s a special occasion curry that is on every wedding and family ceremony’s menu. Kosha means dry, but not in the Western sense, as it still has a gravy. In Kolkata, my relatives cook this in a pressure cooker, but I cook it on the stove top, which takes a little longer but still works well. Typically, it is cooked using mustard oil, but as that’s not so readily av
