Raita is a refreshing yoghurt or curd condiment, which is great at cooling the palate when you are eating spicy food. The pomegranate seeds add pops of colour and sweetness. If you don’t have any to hand though, you could always replace them with diced tomatoes.

Ingredients

  • 500 g natural or Greek yoghurt
  • ½ small cucumber, peeled and finely grated or chopped
  • ½

Method

  1. Whisk the yoghurt in a bowl until smooth and then add all the other ingredients, holding back one tablespoon of the pomegranate seeds.
  2. Taste to check the salt and spice levels.
  3. To serve, scatter the raita with the remaining pomegranate seeds.
