Sweet and sour notes dance on your tongue with this cooling chilled summer drink, which is similar in essence to a Western cordial. You can find tamarind blocks at Asian grocers. If you can, opt for seedless tamarind blocks which will be easier to work with. They last for months in the fridge so you can also use them for some of my curries in this book.
