Roasted curry powder is known as Bathapu Thuna Paha in Sinhalese. This spice powder is commonly used with meat, fish, poultry and meat substitute dishes, although it can also be used in vegetarian curries to give a more intense, robust flavour. This powder is a lot darker in colour and more complex than the unroasted version, because it includes more spices and is heated for longer. Every household has its own unique version, and this is mine.
