Known as Thuna-Paha (three or five) in Sinhalese, unroasted or raw curry powder is commonly found in vegetarian dishes or dals in Sri Lanka. I tend to stick with three spices, but if you want to add two more to make the five, include a couple of curry leaves and a small cinnamon stick.

  1. In a dry frying pan without any oil, roast all the ingredients on a low heat, moving them around the pan for 1 minute to release their fragrance and remove any moisture.
