Masala simply means ‘a blend of spices’ and this one originates from North India with big, earthy spices such as coriander, cumin, cloves and cardamom dominating. There are South Indian meat masalas, which include different spices and ingredients such as fennel, fenugreek, coconut and curry leaves. Both are different from garam masala, which includes fewer spices. This works well with any meat, infusing your curry with wonderful aromas.
