Toast the sesame seeds by spreading them out in a very thin layer over the bottom of an ungreased frying pan and slowly heating them until toasted. When the colour is light brown, remove the seeds from the heat, cool them and crush lightly until the flavour comes out. These may be kept in a closed jar until required.
