Shell, wash and de-vein the prawns. Place them in water to which you have added ½ level teaspoon salt, and let them soak for 30 minutes. Turn the prawns into a colander or sieve, rinse them very thoroughly, and let them drain for at least 10 minutes, or pat them dry with a towel.
