  • 1 lb. whole prawns, prepared as directed
  • 2 level tablespoons Lungching or other Chinese tea

Method

This is very elegant, witty an unusual flavour.

Place the tea in a heatproof measuring cup. Fill the cup to the 8 fluid oz. mark with boiling water, cover it and let it steep for at least 15 minutes. Pour off the liquid, reserving the leaves. Place the whole cooked prawns in a frying pan without additional oil, and add the tea leaves. Sprinkle with sugar, salt and sherry, and mix very l
