38. Preparation of Bird’s Nest

• 2 oz. dry bird’s nest
• 2½ pints (6 cups) water

Soak the bird’s nest in cold water. It will double in volume when softened. Rinse it very well with cold water, and pick out the down. Shake off excess water.
