  • 2 oz. dry bird’s nest, softened
  • 6 oz. candy sugar (rock candy)
  • Just over

Method

Stew or steam (preferably) the softened bird’s nest, sugar and water together for 1 hour. Serve this chilled or tepid.

As bird’s nest is inordinately expensive, you may cut down the amount used by mixing in, in place of 2 oz. bird’s nest, ½ oz. dry bird’s nest, softened as above, and ½ oz. agar-agar. Hold the agar-agar under the cold tap for a few minutes until it swells, then ch
