Ingredients

  • ½ lb. (2 rounds) jellyfish
  • 2 tablespoons sesame oil

Method

Soak the jellyfish in several pints of water, changing the water two or three times over a period of 16 to 24 hours, to rid the jellyfish of its fishy smell and sand. Cut it into thin strips, ¼ inch by 1½ inches, and place the strips in a heatproof bowl. Scald with boiling water for about 10 seconds. Drain immediately and shake off excess water. Let the strips cool. Drain off excess water again
