Chop very finely or mince the spring onions, and, using a measuring cup, measure out just over 5 fluid oz. (⅔ cup). Add iced water or an ice cube plus water to bring the total volume up to 6 fluid oz. (¾ cup). Stir to make a paste. If this is to be stored in the refrigerator, seal it tightly, as it is pungent.
