Method

Wipe the chicken dry and rub its body cavity with salt. Place it in a dish, and rub soy sauce and gin, vodka or other strong alcohol over its body (meikweilu, an aromatic liqueur made from roses, is excellent for this purpose). Let the chicken stand in the dish of alcohol for about 4 hours, turning the chicken occasionally to let it soak into the skin.
