Method

Prepare the chicken parts: Chop the wings into 1½-inch sections. Cut the livers into lobes. Cut the giblets into sections. Heat oil and ginger in a pot. Add all the chicken parts and sauté them until they turn colour. Then add wine, soy sauce and sugar and mix well. Turn heat down and simmer, covered, stirring occasionally, for 25 minutes.
