  • ½ oz. agar-agar
  • 4 oz. turnip
  • 1 tablespoon

Method

Cut agar-agar into 1-inch sticks and soak in cold water for about ½ hour, until softened. Reserve. Peel and sliver turnip to match the size of the agar-agar. Blanch the turnip slivers in 2½ pints (6 cups) boiling water for 3 to 5 minutes, then rinse under the cold tap and drain well. Mix the remaining ingredients together to make a sauce.
