  • 1 lb. prawns
  • ¼ lb. pork fat
  • 3 to 4 tablespoons

Method

Shell the prawns, wash them and pat them dry. Chop the pork fat very finely, then add it to the prawns and chop them together, gradually adding water, salt and pressed ginger. Continue to chop, adding the 3 egg whites and the 4 tablespoons cornflour one by one. When all the ingredients are well mixed by chopping, take a handful of the paste, and squeeze it through index finger and thumb into ho
