Cut the sticks of agar-agar into 1-inch lengths. Bring water and sugar to the boil. Add agar-agar and simmer for 20 minutes, uncovered, until the agar is almost dissolved, stirring occasionally. Pour it through a coarse sieve into a dish or pan, and let it cool to room temperature. Cut it into diamond-shaped pieces and serve in cold syrup, made by bringing water and brown sugar to the boil.
