This all-time favourite combination of flavours can also be used with duck, but chicken is equally tasty and it takes half the time to cook. The floury texture and sweetness of chestnuts complements chicken superbly. These are commonly sold canned or vacuum-packed. Raw chestnuts are time-consuming and fiddly to prepare, with only a slight difference in taste, though you can use raw chestnuts, if you like (see Cook’s Tip).
