Ingredients

  • Old ginger 75 g (2⅔ oz)
  • Water 1.5 litres (48 fl oz / 6 cups)
  • Yellow rock sugar or Chinese brown sugar 60 g ( oz), crushed

Method

  1. Peel, then thoroughly bruise ginger and coarsely chop. Combine with water and sugar in a pot. Cover and bring to a boil, then lower heat and simmer gently for 15–20 minutes. Strain and adjust sweetness to taste.
