  • Water 1.5 litres (


  1. Peel, then thoroughly bruise ginger and coarsely chop. Combine with water and sugar in a pot. Cover and bring to a boil, then lower heat and simmer gently for 15–20 minutes. Strain and adjust sweetness to taste.
