Ingredients

  • Skinned raw peanuts 175 g ( oz)
  • Water 1 litre (32 fl oz / 4 cups)
  • Ginger 2 slices
  • White rock sugar to taste

Method

  1. Soak peanuts in water for 24 hours. Drain well, then combine peanuts in a pressure cooker with water and ginger slices. Cook for about 45 minutes at the setting appropriate for vegetables and beans until peanuts are very tender. Release pressure, then sweeten soup to taste with rock sugar.
